Welllllll I now know that I like my chili hotter. So I should have ordered the Big Jim. So there. I did order Joe Parker, & of course it's great. Just want more heat for me. My husband likes the mild. I go through a lot of the mild however, to get the deep chili flavor in my N. Mex. Green chili stew.

My fondest Jr. high and high school memories growing up in New Mexico, was roasting green chilies on a backyard BBQ grill, with a dear older couple. Fred worked on the railroad, and the end of the line for him was close to where he could get fresh Hatch green chilies every year. He would come home with a huge gunny sack full of them fresh from the fields. He would call me up and we would coordinate a day and spend the whole day sweating, roasting, peeling and packaging them all. His sweet wife Irene, would keep us in cold drinks and snacks but all the while we were looking toward the end the day where our last task was making a huge platter of chile rellenos. The 3 of us would eat them with pure delight and enjoyment. I'd go home with a burning tongue, a full stomach, and my half of the packaged green chile to enjoy throughout the fall and winter with my family.
10 years later I moved to Washington state for a job and now 30+ years later I am still here. Most of those years were spent trying to find good green chile! I would get chile care packages from family and friends who felt sorry for me but as our family grew the demand for good green chile also grew. I tried green chile grown in eastern WA, which is much the same climate where green chile is grown in New Mexico but it just wasn't the same. I am not a green chile connoisseur by any means but though they looked good they just didn't taste the same as a Hatch green chile. Finally found you can order green chile online so tried a few of the companies. Some were ok...one company I liked but they were not consistent. One year I got a box that had almost as much sand, stems, and leaves as green chile.
Well one year I found The Hatch Chile Store and gave it a try. Now it is my one and only for fresh green chile!! Year after year they are consistent, have great service, chile arrives fresh and flavorful. The boxes are full with no added sand and leaves, so I feel they really care about each and every box. I have ordered a few different varieties and we have loved them all. The pre-order capability is great! I am a very grateful customer and expect to be for a very long time. Thank you Hatch Chili Store for bringing me a bit of New Mexico every year!
By the way, when our box or boxes arrive we spend the day roasting them with a dinner of chile rellenos at the end. The tradition continues... thank you Fred and Irene!

Love the characteristic flavor of Hatch chile. Addicted, I.e. can't live without Hatch chiles since the 1980's. The Joe Parkers are enough heat for this inhabitant of the frozen North(Alaska). I used to order mild canned hatch chiles but they are not as flavorful as the fresh or frozen. Love your chiles almost as much as getting them fresh out of the roaster in NM. Thank you for supplying our cravings.

I have to be careful of the chiles' heat so always get half my order in mild as I live in Alaska and many of my local friends that enjoy my cooking are not conditioned to the "New Mexico" heat. They usually love the flavor immediately but take awhile to adjust to the heat.

came fresh and crisp. we roasted them right away and froze the chilis. I made a great green sauce and it was wonderful on our burritos. reminded me of Josi's Cafe in the 1970s when I lived in Santa Fe.

I've been ordering Mild Roasted Hatch Green Chiles for over 10 years now, and will never stop. They get me through the long, cold New England winters. When I lived it Texas I used to drive to New Mexico buy them fresh and take them home and roast them myself. It would take days, and now I don't have to. They come roasted and peeled and ready for the freezer.

I LOVED the first 3 boxes we received, however, the last box was not that good or easy to roast. They were "mushy" and just not that good. First time we were disappointed in the quality. We have been satisfied customers for many years!

Although I've grown up on Hatch and other NW green chilis (from Roswell, NM), this was my first order from The Hatch Chile Store, but it won't be my last. The customer service was excellent, the shipping was fast and the prices were very reasonable. However, the chiles themselves are the star of the show. I ordered 25lbs and even with so many chiles, the quality was excellent (I think only 3 chilies were not usable in the very large box we received) and they roasted up very nicely. The heat and flavor are excellent and definitely as advertised. Thanks!

In addition to the fresh green chile we ordered, we also bought an 11 oz. container of the red powder. The flavor and color and heat are all EXCELLENT. There's just nothing like the rich, smokey flavor. I'll definitely be back for more.

Since we moved from NM years ago we have missed the Rellenos and now we can have them at a moments notice! They are our most favorite meal from our years in NM and Hatch really have wonderful ones! Again I can just pop a couple in the air fryer and have a meal ready in minutes. Its so hard not to eat them all the time and run out so fast.

I paid extra for two day shipping to guarantee chile was fresh. When I received delivery there were many spoild chiles and the entire box stunk of rotten chiles. The chile was delivered within two days but I believe the chile was setting too long at the hatch chile store. Also the stems of the chile were dry which indicates chile sat at their facility for some time. Very dissapointed to pay almost $100.00 to have to throw entire box away.

These were great quality, very plump and arrived about 10 days earlier than expected due to a back order. I ordered medium heat and maybe. Because I ordered too early in the season, they were very mild. They did have great flavor and most of them stayed whole enough for chile Relleno after roasting. Thank you.

From NM to CA in a couple of days, Chiles showed up in perfect condition! Roasted on the grill, peeled, bagged and already almost out! Delicious flavor without too much heat. Had to order more, but this time "hot" to create some surprise!

I worked as a consultant at Nova Bus in Roswell NM and traveled back to Atlanta each weekend my crew and I would got to your farm and get fresh roasted peppers. We packed in ice and took them back to Atlanta each Friday. We did have to share some with the Flight attendants. This was in 1998. Fast forward to 2021. I ordered 25lbs and received them as promised in perfect condition. I will continue to order each season. Thanks for your hard work.
