Great, had it mixed in with scrambled eggs the first morning. Delicious!! Really miss green chile after leaving NM due to health issues after 55 years.

The chili's are awesome! The delivery company not so much. However I will continue to buy because they're so darn good and Hatch Green Chili Company takes care of you when the delivery company drops the ball. They're a stand up company!

I only eat Hatch green chiles!! I am a little disappointed that the mild has a little kick to it, just like the medium heat did. Business of my severe GERD, I had to go back to eating the mild frozen green chile. I still love it even though it is upsetting my stomach!!! I will always buy Hatch green chiles over any other brand!! After living in NM for a couple of years on and off, I developed a love for green chiles and started making my own green chile sauce and I either eat it with tortilla chips or on a Mexican burger!!!

Tastes great. Good to have on hand when you want to make a quick salsa, or throw in eggs, or a quick chili verde meal. Next time ill get the hot! For me but my husbund likes the taste and prefers it a little less hot then me.

I love the frozen Hatch green chilies, I can put them in my green chili, in my chili when I make it. Or I can just thaw them out and put them in scrambled eggs or anything else that I like I love Hatch green chilies.

I'm a transplanted New Mexican living in Houston. Ordered 10 lb of frozen whole green chiles from HCS since local grocers did not purchase and roast this year. The product arrived in good condition and chiles looked good. However, I was highly disappointed since the chiles lack in both flavor (very bland) and any heat. Honestly could have been eating anaheim pepppers. Was informed that the batch I received was from last year's harvest, i.e. a year old. Normally that shouldn't be a factor for the lack of flavor as I have eaten chiles frozen about a year that taste very good. Tried to reach out to discuss these issues with a manager but was unsuccessful in making contact. Ultimately decided to request a refund but only got 50% as I missed the 30 day notice by 2 days (guess I didn't realize that I needed to try them immediately!)
Hopefully my batch was just an anomoly from HCS, because these are definitely not representative of how hatch chiles should taste.

It was great to get the chile so quickly and ready to use. We bought medium to mix with the hot, but the hot was not very hot after all. Of course every crop is different.

This is the skip-the-mess version of Hatch season: real Hatch green chile, flame-roasted, partially peeled, vacuum-sealed, and flash-frozen within hours of harvest. You get the smoky depth of a traditional roast without the grill, the broiler, or the cleanup. It is grown in the Hatch Valley of New Mexico, along the Rio Grande, the one place true Hatch chile comes from. Never imported.
New to it? It is smokier and more complex than a jalapeño, with heat that runs from mild (under 2,000 SHU) to extra-hot (11,000+ SHU) depending on the variety. See how Hatch compares to Anaheim, pick your spice with the heat level guide, or roast your own from fresh chile in season.
How do you use roasted Hatch chile?
Think of roasted Hatch chile as a flavor starter: it adds smoky depth fast, with no long simmer required. The high-impact uses people come back to:
Breakfast
Fold into scrambled eggs, breakfast burritos, hash browns, or a breakfast sandwich.
Fast weeknight dinners
Stir into soups, stews, chili, or rice bowls for instant Southwestern flavor.
Smother everything
Build it into enchilada sauce, burrito sauce, or a creamy green chile sauce.
Roasted chile is even better as part of a bigger frozen order. Mix and match any frozen items below. They ship together in one box, and your bulk discount applies automatically at checkout:
Yes. Every order from The Hatch Chile Store ships with dry ice in an insulated box. We ship Tuesdays and Wednesdays only. Most orders arrive frozen solid in 1 to 3 business days anywhere in the US. If anything shows up warm, send us photos of the box and the product within 4 hours of the carrier's delivery scan; if it arrives cold but crushed or split, within 24 hours. We'll make it right.
Mild (0–2,000 SHU): Smoky Hatch flavor with barely any heat. Great for queso, eggs, and kids.
Medium (2,000–7,000 SHU; Big Jim ~6,500 per NMSU CR706): Our bestseller. You'll feel a kick, but it won't take over the dish.
Hot (7,000–11,000 SHU): Real heat that builds. For people who like spicy food.
Not sure? Start with Mild. Medium is what most of our customers order, but fresh and frozen chile can't be returned or exchanged if the heat isn't for you.
Yes. Our roasted Hatch green chile is flash frozen at harvest and ships every week, all year, from The Hatch Chile Store. Fresh unroasted chile is only available during harvest season from July through October.
Yes. Thaw what you need in the fridge overnight and refreeze the rest. Each vacuum-sealed bag is 1 lb. Our frozen chile has a 2-year shelf life at 0°F.
Most canned "green chile" is Anaheim pepper grown in California or Mexico, packed in vinegar brine for shelf life. Our Hatch green chile is a different pepper entirely, grown in the Hatch Valley of New Mexico and flame-roasted the traditional way. No brine, no vinegar, no preservatives. We've been farming chile here for five generations, since 1917. The Hatch Chile Association certifies our product as authentic Hatch Valley grown.
Yes. Our Hatch green chile is fully flame-roasted, partially peeled, vacuum-sealed, and flash frozen. Thaw it and cook it into your dish: it's labeled uncooked, so heat it to 165°F before eating. Available chopped or whole. No roasting, no peeling, no mess.
Chopped is the easier pick for most recipes. Use it in green chile cheeseburgers, breakfast burritos, eggs, queso, green chile stew, soups, and mac and cheese. Whole is what you want for chile rellenos, layered enchiladas, or sandwiches where you want a full roasted pepper. If you're not sure, go with chopped.
Each box is 5 lbs (five 1 lb vacuum-sealed bags). That's roughly 10 to 15 meals depending on how heavy you pour. Most repeat customers order 2 to 3 boxes to stock their freezer and save with our volume discounts (up to 30% off at 4+ boxes). If you cook with chile a few times a week, 10 to 15 lbs will last 2 to 3 months.
