Roasted! My goodness the time it saves me. Although I do love a chile that's un-roasted.
Sometimes there aren't enough hours in the day, set out the frozen chile's either the night before or even the a.m, and meal prep in the evening is on a roll!
Stuff with some cheese, chop and add to chili, top a burger, green chile stew, the recipes are right here on the website, easy, fast, and hold on!! DELICIOUS!!
I was given a frozen lb. pack by my boss in 2000, while living in Roswell, and I missed them over the years.
Thank you all (even the field workers, roasters, peelers, office personnel, etc., etc.). so much for growing, harvesting, delivering these beautiful peppers!
They arrived quickly and when you open the box it's, "How many dishes and snacks can I create with these, better buy more, this won't be enough to get me through the year, (of course I did buy more). Not regretting it one bit.
Oh, I forgot to mention the handy zip lock style freezer bag the chile's are in, very convenient and easy to store in the freezer.
You're the only company I have ever bought fresh and roasted peppers from, and the chili powders, I personally can't compare with others and their products.

We just love our peppers from the hatch chili store. The Sandia's are our favorites. When the peppers arrive my husband must be the first person to open the box as he loves the fresh smell of the peppers. The shipping is fast and the peppers arrive nice and fresh. These are peppers that we can not get in our area so we are happy to have a place to get them. The prices are reasonable too! Enjoy!

The chiles arrived sooner than expected and there were hardly any red ones. They were fresh and really nice sized, plump chiles. I'll be ordering more later this month.

Very pricey with the freight costs, but excellent tamales. Very light masa touch, some of the very best I've ever had. But, for an effective cost of about $4.50 each, they'd better be good. Hatch delivers on quality

These chiles are amazing! The flavor is amazing and transported us back to a favorite NM vacation a few years ago. Although a bit pricey, the flavor, preparation, and convenient packaging (1 lb bags with ziploc-like tops) make these well worth it. Will be ordering again.

This is a great way to get my Chile's and have them for all year. Very convenient packaging which allows me to use just one small pack that's just perfect for a meal. Everything was fresh and tasted great. I'll be ordering again.

I just received my med to hot and was disappointed it was not hot at all not even a little bit but I'll try the hot next time. Just tell you the truth .

I was so excited when I got my chile. Only thing is I wish I could have ordered the lumbre but that was not an option. Maybe next time. This batch seems to have an unpredictable heat or lack there of to it. Still enjoy the taste, roasting, peeling and freezing of my chiles. It brought back so many good memories of home.

This also is beautiful but the packaging needs to be improved so that it arrives whole. Approximately 30 little chiles had fallen off. It needs to be wrapped in more than a sheet of brown paper to cushion it.

I ordered a box of fresh chilies last year. Just the smell of them puts me in a happy place!
I broiled them in the oven and immediately put them in a bowl with press & seal. Let them sweat in there for an hour or until cool.
Then I carefully placed them in a freezer bag -flat, no stacking; maybe 5 or 6 chilies to a bag. Then I put all of a cookie sheet and into the freezer. After they froze I removed them to a place in the freezer and stacked the bags. We enjoyed every meal made with our Big Jim Hatch Chilies.
Love, love, love my Hatch chilies and these were the best I've ever had. Excellent quality, timely delivery, best ever - bar none!
Gonna get me some more!!!

Pretty disappointed. I asked for mild..they marked mild but they were med-hot!! Over 70.00🌶The pepper size was great. However, cant really use them. No one in family eats medium-hot.
I order from NewMexico Catalog but they had no mild peppers. My bad choice tho. Won't order from this Co. anymore..

Pork was delicious and cooked perfectly, but soup was a little bland and thin … more like a caldo than pozole. Spiced it up with beans, spices and hominy and made a couple of meals out of it.

Sorry even tho I cooked this pan fried, air fried and microwaved, none of the cooking methods could improve your Rellenos. The breading was too thick, but more disappointing was the hatch pepper was stringy and too thin. It was all skin. Would like a reimbursement as I won’t be finishing the remaining 8 rellenos.
Otherwise, I adore your chopped green Chile and have ordered 4x from you all over the last 2 months. Best I’ve tasted since I moved away from Santa Fe.

I ordered my hatch green chile sauce a few weeks back and I've been using it with everything. I've put it on burritos, burgers, used it as a dipping sauce, and used green chile as a replacement for pickles in tartar sauce for fried fish. It has great flavor, fresh, earthy, and I really like that it is made with simple ingredients rather than loaded with preservatives.
My only issue is that I believe there was a bottling mix up with my order. I ordered a "medium" and a "hot" version, and found that the one labeled "hot" had only a hint of heat whereas the one labeled "medium" announced it had heat (a good amount of heat, not unbearably hot) when I opened the jar and smelled it. I ordered two different heat levels because I had never tried New Mexico chile sauce before (I see it on food shows and have always wanted to try it) and wanted to gauge how hot it was. Thus, I'm not sure if I got "medium" and "hot" or perhaps "mild" and "medium." Regardless, this is a good product that tastes great, but if you're looking for some heat definitely go with "hot" or "extra hot" depending on your tolerance.

I was living in Denver. Where green chili was in just about every restaurant you went too. Now I have relocated in the South, they have no idea about real green chili. So I had to turn them on to Hatch's Green Chili. They love more than I do, and I love it
