I received 60 chili's which some were rotten and slimy. I even had jalapeños in there that's part of the 60. So basically by time I throw out the rotten ones it's not worth the money for rotten chili .

We lived in New Mexico for 10 wonderful years and now we can have the amazing Taste of Enchantment with us year round thanks to delivery from Hatch Chile Store. We do frozen green medium heat and they're just the right level inside enchiladas, stews, or casseroles. Our daughter is a heat-lover and prefers the hot. We ship her some for her birthday every year. She taught us how to make a seasoning mix with the dried green chile powder, cheddar popcorn powder, and shake like a flavor bomb over buttered popcorn. YUM! Thank you, Hatch Chile Store! The world would be less delicious without your deliveries!

I was in Turkey, but my wife said they smelled amazing when they arrived, even better when she roasted them. We have bought from other Hatch companies, but the quality of the peppers were beyond our expectations. All in the package were relleno quality and that’s what I’m making for a special occasion. We’ll buy again and pre-order like we did this time. Thanks for your efforts on quality.

I have found the mild red chile sauce to be the perfect sauce for Chile Colorado. I always laugh that black pepper is too spicy for my wife but this Hatch Red Chile Sauce at the mild level is excellent for her. Cube and sear some beef then slow cook it with Hatch Red Chile and everyone will think your a master chef LOL

I found that the whole chilies are roasted such that the skins are removed easily but they seem to be undercooked. I have roasted my own chilies for 50 years and found that the temp of the chilie flesh has to be raised such the chilies are partially cooked. I have bought roasted chilies from steet roasters where the skins are blistered but the flesh is not partically cooked and in making rellenos there is not enough addtional cooking temp and time so the chile is tough. This seems to be your problem also.

Arrived quickly. Thee inside of the box was slimy. I had to cull out the spoiling jalapeño’s and wash all the rest while cutting off spoiling ends to save what I could. They were not hot as ordered either.

Did a side-by-side comparison with Vidalias. In my opinion, the Hatch sweet onions are just as great!-if not better! I detected minimal to no bitterness. A great tasting onion! I really didn't expect anything bad from the greatest producer of green chiles!!!

As we are transplanted New Mexicans, we always look forward to our fresh Hatch green chile! The Hatch Chile Store always sends us big, beautiful Big Jim green chiles and we order a total of 75 lbs which fills up our chile freezer and usually lasts us til the harvest next year. Our neighbors even look forward to that distinctive smell as we roast the chiles in our tabletop roaster in our driveway!

I ordered four 25-pound boxes of medium chiles to preserve a year's supply of green chile goodies for my family. As always, they arrived in beautiful condition and were gorgeous, meaty and fragrant chiles. I know this wasn't an ideal year for chile growers, but they were still super flavorful and delicious.
In case you're curious what in the world one woman can do with 100 pounds of green chiles: I put up about 20 quarts of chicken chile verde, 20 quarts of pork green chile, I freeze dried about 15 packets of roasted green chiles and then simply froze the remainder (about 20 more packs).
Beyond that, when roasting the chiles, I don't put the blackened chiles in a bag. I put them in a big pot and save that juice that collects at the bottom and I use that for either a marinade base or a canning liquid for pork or chicken. Last thing I do: (yes! There's more!) I save the chile skins and seeds to freeze dry or dehydrate, which I pulverize later and make a green chile season salt that is fantastic on french fries or even popcorn. Still haven't figured out what to do with the stems. LOL.

The product arrived still frozen and my wife divided the packages up so we could have more for later. They were good stuffed, and great in her green chili and our friends down here were confused as they only thought chili was a meat dish.
Unfortunately my wife passed away on June 14th this year and I won't be getting anymore product as she was also my cook.
